4/21 Recipe: Tarragon Spritzer

If you have tarragon in your garden, this is the perfect time to make this delightful drink to sip as you enjoy the springtime blooms.

INGREDIENTS// 

  • 3/4 cup Sugar

  • 1/2 cup Water

  • 1 cup fresh Tarragon leaves

  • 1 teaspoon Aniseed

  • 1 tablespoon Lemon zest

  • 1/8 teaspoon Baking soda

  • 1/2 cup ice

  • Pinch of Salt

  • Seltzer & ice in a Tall glass

DIRECTIONS// 

  1. Simmer sugar and 1/2 cup water until dissolved. Then add fresh tarragon leaves, aniseed, grated lemon zest, baking soda, and a pinch of kosher salt.

  2. Boil for 1 minute, then transfer to a blender. Cool for 5 minutes, then blend with 1/2 cup of ice until smooth.

  3. Refrigerate for about an hour, then strain and stir in 1/4c lemon juice.

  4. To make a soda, fill a tall glass with ice, add 2oz of syrup and top with seltzer.
